Chris Mueller’s Bistro on Spruce

Chris Mueller is well known in the restaurant industry here in the Inland Northwest and has worked just about every job the industry has to offer during the past 30 years: meat-cutter, bartender, server, line-cook, sous chef, assistant manager, wine steward, general manager, the list could go on.

Now, as owner of the Bistro on Spruce, he brings together his talents to present a restaurant that has all the elements of warm and welcoming service, great food, wine and beer, with an ambiance that adds the perfect touch.

After graduating from Eastern Washington University with a degree in Business Administration, Chris worked at Patsy Clark’s Mansion in Spokane and ‘sister’ restaurants in Olympia and Portland for 14 years, then Spokane’s Luna for eight years, and was the manager at Beverly’s at the Coeur d’Alene Resort for three years.

Ever exposed to food and wine at the regions finest restaurants, Chris has also taken and passed The Master Court of Sommeliers level one program.

It has always been Chris’ goal to open his own restaurant. With his strong leadership and business skills he applied to the past restaurants he has managed, he is now applying that experience to his own vision—at Bistro on Spruce. It’s fun neighborhood dining with great fare at a reasonable price and the natives are welcoming them with open arms.

Being a native of the Inland Northwest, Chris is committed to providing a fun atmosphere where an exciting menu and a great wine and beer list will entwine to bring people together. His enthusiasm and experience in fine dining, knowledge of wine and insight in staff development benefit both the staff and guests alike. It has quickly become one of Coeur d’Alene’s new generation local favorites!

Chef Matt Curmi

Chef Matt Curmi, the newly appointed head chef at Bistro on Spruce, was born in Scotland to an English mother and Maltese father. Matt learned to cook during high school in Malta, a European country off the coast of Sicily. He applied for his Visa in 1996 and headed to Arizona; where he went on to get his degree in hotel restaurant management from the University of Arizona in May 2000. His education, though, is a combination not only of formal instruction, but of culinary instruction brought on through his world travels.

With his culinary journeys encompassing not only the US but the UK, Spain, and other regions of the Mediterranean, he was able to cover many cuisine types and flavors. It was Maine where he learned the techniques of working with seafood. He lived in Spain, where he cooked Spanish and German for two years, followed by England, where he was cultured in French cuisine by working in a French bistro. His next endeavor was a Thai food pub in Poole, South England, where he remained for three years.  In 2006 he received the Uk Pub chef of the year award for eastern cuisine and acquired a 3 week stage placement at the Fat Duck restaurant in Berkshire, England.

So how did Matt end up in Coeur d’Alene, Idaho? After receiving another visa he grabbed his dog and headed north, not knowing where he was destined to end up. In June 2008, he landed in small-town Coeur d’Alene. It would be his final stop, at least for the time being. He began his local career at Bardenay Restaurant and Distillery in the Riverstone Development. Now, less than one-year later, Matt is the head chef at Bistro on Spruce. Since his arrival, he’s been spicing up the menu with new items such as Thai pork curry, among other tasty notables. Try him out. He has a world of flavors for you to try!

 

The food was fantastic, the service was friendly and the location was adorable. .... I should also mention that they had a fantastic live jazz combo playing the standards and the best carrot cake my dad has ever tasted. Dad doesn't drop compliments like that very easily.
